Shopping to Slim Your Waist and Wallet - April 14 Ad

With this week's ad we are going to make a great Spinach Salad with Pork, Oranges and Feta Cheese!

1 pound Farmland Pork Chops or Pork Tenderloin (Buy One Get One Free this week)
2 California Cara Cara oranges, halved ($0.77 per pound)
Cooking spray
2 (6 oz) bags of Dole Fresh Spinach (2/$3)
1/4 cup light balsamic vinaigrette
1/4 cup (1 oz) Valbresa Feta Cheese ($5.49/lb)
Fresh Ground Pepper (optional)

Grill or cook pork to your liking (about 5 minutes each side if you grill a thin cut). Check that the internal temperature reaches 160F.
Peel and section oranges.
Thinly slice the pork.
Combine oranges, spinach and vinaigrette. Toss gently to coat.
Divide salad among six plates. Top with pork and sprinkle with feta cheese and pepper, if desired.
