Shopping to Slim Your Waist and Wallet- June 2

After Memorial Day celebrations this past weekend with family, friends and fun, summer is officially here.  I don't know about you, but at my house, the grill is on stand by all summer long! Grilling is a fabulous and healthy way to cook anything from lean meats to veggies.  One of my favorite foods to frequent the pit is chicken breast.  Here's an idea- you’re already grilling the chicken, so why not throw some pineapple slices on there too? Tickle your palate with a taste of the tropics!  The caramelized pineapple has a subtle flavor and unique texture packed with vitamin C and is perfect paired with chicken.

What You Need:
4 (6-ounce) Food Club skinless, boneless chicken breasts
Cooking spray
1/4 cup Lawry's Teriyaki Pinapple Marinade (Free with store coupons!)
4 (1/2-inch-thick) slices Dole Pineapple Slices (Free with store coupons!)
4 (1.5-ounce) King's Hawaiian Bread, sliced and toasted (Free with store coupons!) or whole wheat buns
Light mayonnaise (optional)

Prepare grill. Brush chicken evenly with marinade. Place chicken on grill rack coated with cooking spray; grill 5 to 6 minutes on each side or until done, brushing occasionally with marinade. Grill pineapple 2 to 3 minutes on each side or until browned. Assemble sandwiches by spreading mayonnaise on bottom halves of bread, if desired. Top each with 1 chicken breast half,  and 1 pineapple slice, and 1 bread top. Serve immediately.
