My fiancé may break up with me!

I have done a bad thing. I usually am one to abide by the rules and mind my P's and Q's, but I've stolen something from my fiancé and when he finds out ... EEK, I'm afraid to know.

My fiancé is a man's man. You know the kind: he has a truck, a dog, goes fishing and loves to grill. (In fact, he refuses to hold my pink lunch bag in public for fear that it will reduce his manliness). This weekend he made his famous Fungus Burgers and I stole the recipe!! But it's so good -- and so good for you -- I had to share.

The entire burger is only 270 calories, 4.5 grams of fat, 11 grams of fiber and 32 grams protein!!!

 Famous Fungus Burgers (Mike thinks the recipe name should be gross and manly)
1 lb ground turkey breast - NuVal score 64, a trade up from regular ground turkey, a NuVal score of 33
8 oz white button mushrooms, finely chopped - NuVal score of 96
1 small onion, white, finely chopped - NuVal score 93
2 tablespoons light soy sauce - NuVal score 23
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup crumbled blue cheese - NuVal score 23
Thomas' Light English Muffins - NuVal score 42
Tomato slices - NuVal score 96
Lettuce leaves - NuVal score 100

Mix the turkey breast and next 5 ingredients (through black pepper) together. Form 5 patties. Place the burgers on the grill over direct heat. Cook about 3 to 4 minutes per side, turning once. Do not press down on the burgers with the spatula during cooking - this only squeezes out the juices, encourages flame-ups and dries out the burger.

Toast the English muffins. Slice the tomatoes and separate the lettuce. Top the burgers with bleu cheese and assemble your perfect burger.

Considering that some burgers at fast food joints have 700+ calories, this burger is a healthy hit. This recipe made me swoon for Mike, not because he knew how to make a healthy and delicious meal but because he was willing to do the cooking!
