Almond Chocolate Chip Cookies

I (Tyra) found this recipe originally on the NuVal website blog and decided to try my hand at making them. It only takes 4 ingredients to get going. Understand that the majority of calories in this recipe come from healthy fats found in almonds and canola oil. Almond meal flour has a NuVal score of 77, and canola oil has a score of 24.
I used my stand mixer to make my initial batch and discovered that over-mixing causes the oil to leach out of the cookies and burn while in the oven. Didn’t necessarily affect the taste, but the looks were less than desirable.

It works better to mix by hand and only until blended.

This recipe has been tested by my husband, son, and other dietitians and coworkers. Try it for a quick 4-ingredient cookie that gets a healthy dose of dark chocolate into your eating plans!

Catherine’s Chocolate Chip Cookies

Form the dough into rounded balls
and send 'em off to the oven.
3 cups (12 oz) Bob’s Red Mill Almond Meal Flour
6 Tbsp (2 ½ oz) Food Club Canola Oil
6 Tbsp (4 ½ oz) Madhava Agave Nectar Light
¾ cup (4 ½ oz) Ghirardelli 60% Cacao Bittersweet Baking Chips

1. Preheat oven to 350°F. Line cookie sheets with parchment paper.

2. In medium bowl, mix together by hand almond flour, oil, agave syrup until just blended. Avoid over-mixing or beating with stand mixer. Stir in baking chips.

3. Using a 1-tablespoon cookie scoop, drop in mound on parchment-lined cookie sheet. Bake for 8 to 10 minutes in preheated oven, until the cookies begin to turn golden on top. Cool for 5 minutes, then remove and place on baking rack to cool completely.
