What's New: Kinnickinnick's Panko Bread Crumbs

This Friday, for our "What's New" blog, we're making Gluten Free Parmesan Chicken. Those who shop at Market Street regularly know we carry a vast assortment of gluten free products. Well, we are always on the hunt for new products for our guests. We just started carrying Kinnickinnick's Panko Bread Crumbs (and the graham cracker crumbs) so we have a recipe for you.

I (Robin) made this delicious recipe last week and had to share it with you. Wait till you see the finished product (below).

Gluten Free Parmesan Chicken
4 boneless, skinless chicken breasts
1 cup Sweet Rice Flour
1 tsp kosher salt
½ Teaspoon freshly ground black pepper
2 large eggs
1/3 cup Water
1 ½ cups of GF Kinnikinnick Panko Bread Crumbs (available at Market Street in the Gluten Free set)
½ cup of freshly ground Parmesan
1 tsp of Crushed Red Pepper Flakes
1 tsp of Garlic Powder
1 ½ tsp of dried thyme leaves

1. Preheat Oven to 400F
2. Coat a baking rack with a non-stick spray and place into a cookie sheet
3. Pound the chicken until they are ¼-inch thick. You can use either a meat mallet or rolling pin

4. Salt and Pepper chicken
5. Combine the rice flour, salt and pepper in a shallow dish.
6. In a second shallow dish, beat the eggs with 1/3 cup of water
7. In a third shallow dish, combine the bread crumbs and parmesan cheese

8. Dip both sides of the chicken into the rice flour, then the eggs. Then dredge both sides in the bread-crumb mixture, pressing lightly.

9. Place chicken onto baking rack
10. Bake for 25-27 minutes or until Chicken is 165 degrees
