What's New: Baby Eggplant


Baby Eggplant!!! This delicious eggplant is the perfect size and is great on the grill. I (Jennifer) sometimes use eggplant in place of meat items. It is super easy to make and goes perfect with summer pasta salad or other grilled veggies.

What you need:
1-2 baby eggplants
McCormicks salt free seasoning – my favorite is the garlic pepper blend
grated parmesan
olive oil
dash of sea salt

McCormick Garlic Pepper Blend, sea salt and grated parmesan.

 Peel the eggplant and thinly slice. Brush on olive oil, sprinkle with garlic pepper blend and dash of sea salt.


Baby eggplant, ready for the grill.

 Cook on the grill, in the oven, or on the skillet (the baby eggplants cook quick so be sure to watch them ~3 minutes on each side or until lightly brown and softer consistency).


Grilled eggplant, hot off the grill and sprinkled with parmesan cheese!

After you remove it from the grill, sprinkle the grated cheese on it and serve hot.
