What's New: Crock Pot Pumpkin Oatmeal

Here's a quick way to make a hot and healthy breakfast. This will be perfect in the fall (if it will ever cool down in Texas!).

Crock Pot Pumpkin Oatmeal

Prep time: 15 minutes
Cook time: 6-8 hours
Total Time: 8 hours max

1-15 oz can of canned pumpkin
5 cups water
1 ½ cups steel-cut oats
¼ cup honey or maple syrup
1 tbsp brown sugar
1 tsp ground cinnamon
½ tsp nutmeg
½ tsp salt
OPTIONAL: Garnish with a few dried cranberries and/or walnuts

Combine everything in a crock pot, cover and cook on low for 6-8 hours. Stir well before serving.

Makes 8, 1 cup servings
You can reheat the oatmeal in the microwave on following mornings.
