What's New: Pumpkin Butter

What says Fall better than pumpkin? I love the flavor of pumpkin in all things from coffee to pumpkin bread. I decided to make pumpkin butter and enjoy the season. It is great on bagels, toast or anything you can imagine. I have also enjoyed sharing with friends. This is a great way to enjoy the goodness of pumpkin flavor without all the calories and fat. Enjoy!!

Pumpkin Butter
Ingredients
½ cup white sugar
½ cup Light Agave Nectar
1 tsp vanilla extract
1 ½ tablespoons of Cinnamon
1 tablespoon of Pumpkin Pie Spice
1 (5 pound) fresh pumpkin-seeded, peeled, and cut into 2 inch cubes




Instructions:

1. Cut pumpkin in half and scrape out the seeds and insides

2. Peel the pumpkin (Easier if you slice the halves into slices…like a cantaloupe)





3. Cut into 2 in cubes

4. Combine sugar, cinnamon and pumpkin pie spice in a bowl. Place about ¼ of the pumpkin into the bottom of the slow cooker, and sprinkle with ¼ of the sugar mixture

5. Repeat 3 more times and pour the Agave Nectar and vanilla extract on top of the last layer.




6. Cover the slow cooker and cook on low for 8 hours or overnight. Stir a few times during the cooking process.

7. When the pumpkin mixture is dark, golden in color, place an immersion blender into the cooker and blend until smooth.




8. Place in jars and share with friends and family
