Dietitian's Top Pick - Amy's Black Bean Chili






This winter I have already attempted to make several different variations of black bean soups, stews, and chilis. However, after each cook-off, I leave my kitchen somewhat disappointed as I did not quite create what I had in mind. I have now given myself permission to stop the insanity and enjoy a delightful black bean chili without spending hours in the kitchen and wondering how I could have made it "better." Amy's saves the day again! This black bean chili is flavor packed and not overwhelmingly spicy, like most other chilis. This vegan treat is an excellent source of protein (13 grams per serving) and hearty serving of veggies. This can is filled to the brim with organic black beans, onions, tomatoes, bell peppers, and green chiles - YUMMY! So as my wise husband says, "dont fix something if its not broken" I will glady pick up my can opener and put away my LeCreuset and enjoy my chili in 2 minutes versus 2+ hours! Cheers to that!
