Tuesday Trade Up: Pancakes

One of my favorite things about Saturday’s is getting to cook my family breakfast! We love your typical pancakes, scrambled eggs, and orange juice. Recently, I decided we would have breakfast for dinner! As crazy as it sounds, it was delicious and I will add nutritious. Whether it is breakfast or dinner, pancakes make the list in our family for taste and nutrition.

Take Hodgson Mills Buckwheat pancakes for instance. This mix has a NuVal score of 25 and is a good source of fiber and protein when compared to a similar pancake mix like Aunt Jemima with a NuVal of 5. The difference in the NuVal score is clearly due to the higher amount of fiber and protein and lower amount of sugar and sodium.

Don’t forget about portion control---about 4 - 4” pancakes (the size of a CD) equal 1 serving of most pancake mixes.
