What's New: Raspberry Mousse for your Valentine!

A while back, we featured a recipe for the holidays… ‘EggNog Mousse’. Using the same recipe this month, we put a Valentine twist on it ---Thanks for the suggestion from our wonderful followers! We hope you enjoy this healthier sweet treat!

We used Dr. Oetker Organics Cooked Pudding and Pie Filling Mix, an organic pudding mix with no high fructose corn syrup, colors, dyes, artificial flavors, etc.  You can find this at Market Street on the baking aisle on the copper shelves.

We also used TruWhip, an organic “cool whip” which also contains no hydrogenated oils, high fructose corn syrup, or artificial flavors.

This go around, we used fresh raspberries and fresh raspberry puree. This adds a sweet and tart flavor and the beautiful pink & red colors perfect for Valentine’s Day!

Raspberry Mousse
1- 3.8 oz box of Dr. Oetker Organics Vanilla Pudding and Pie Filling Mix (not instant)
½  cup raspberry puree (about ¾ of a small container)
6 oz TruWhip frozen whipped topping
Anna’s Almond Thins
Fresh raspberries to garnish


1. Follow the directions on the pudding box, refrigerate until pudding is cool. I used the microwave method and it was simple, quick, and the pudding turned out great! The key is stirring it every 2 minutes and cooking it until it thickens.
2. Blend 3/4 cup of fresh raspberries in a blender until smooth
3. Remove pudding from refrigerator and stir in 6 oz (a little more than half) of the whipped topping, stir until mixed. Stir in ½ cup raspberry puree until well mixed.
4. Spoon into ramekin dishes and serve with one Almond Thin (these break easily into little heart shapes). Garnish with fresh raspberries.

Makes about 6 servings.
