Dietitian's Top Pick: Amy's Black Bean Vegetable Soup


Today our Dietitian's Top Pick is Amy's Black Bean Vegetable Soup. This is my (Alicia's) favorite soup. It is so filling and as a vegetarian, I love that it provides me so much protein, fiber and iron.

Sodium: 620mg (this is the one thing I don't like, when I eat 2 cups I've had 1240mg sodium)

Iron: 8% (16% when I eat the whole can)

Ingredients: (Vegan) Organic black beans, filtered water, organic onions, organic carrots, organic corn, organic potatoes, organic celery, organic leeks, spices, organic cilantro, sea salt, organic garlic, organic high oleic safflower and/or sunflower oil, organic black pepper.

I love that I know and recognize every single ingredient. No mystery or franken-foods in this! On Amy's website, they also promote this soup as gluten free, dairy/lactose free, soy free, no cholesterol, tree nut free, low fat, vegan and kosher. It's also USDA organic. Wow! That's a soup that could please a lot of people.
