Cinco de Mayo Guacamole



 
How to pick the ripest avocado:

Avocados are a great option to add to any meal!  Cinco de Mayo is a perfect opportunity to experiment with this nutrient-dense food.  Avocados are a great source of 20 different vitamins and minerals!  They are also a great source of a healthy fat known as "monounsaturated fat."  This means that avocados have many health benefits!  They can help lower the risk of heart disease and stroke and help decrease the levels of "bad cholesterol."  Consider substituting avocados as your healthy fat option in place of foods that contain saturated fat and trans fats!
1 Medium Avocado (5oz) = 5 servings (See nutrition label above for 1/5 of an avocado)
Choosing ripe avocados doesn't have to be a mystery! Simply look at the avocado and check for: 
1) No signs of bruises or soft spots
2) Firmness
3) If it yields to gentle pressure and
4) A color shift from pale green to a dark green color. 

A good marker of ripeness is if the stem falls off after gently grazing your thumb across the tip of the stem. A sign of an over ripen avocado is if it rattles when shaken.

Avocados should be stored in a cool dark space. To ripen unripe avocados, place them in a brown paper bag until the avocado shows signs of ripening. To speed the ripening process, add a banana or an apple to the bag with the avocado.

Peach Guacamole
recipe adapted from Avocados from Mexico

Ingredients
3 fully ripened avocados from Mexico, halved, pitted and peeled
3 tablespoons lime juice
3 tablespoons minced onion
2 tablespoons minced jalapeño pepper
3 tablespoons chopped fresh cilantro
1 clove garlic, minced
3/4 teaspoon salt
1 cup diced peaches
Blue corn tortilla chips

Instructions
In a large bowl, combine avocados and lime juice. With a fork, coarsely mash. Add onion, jalapeño, cilantro, garlic and salt; stir until just combined. Add peaches; stir. Serve with blue corn tortilla chips.



Gather your ingredients


Cut open the avocados, remove the pit, peel and place in a bowl.
 

Combine all the ingredients except peaches.

Fold in peaches and serve immediately with blue corn tortilla chips.
