Cherry Quinoa Dinner Recipe

Today I want to share a recipe with you that uses two ingredients that most people aren't sure what to do with: quinoa and fresh cherries. Many people have heard of quinoa but don't know what to do with it. And cherries, sure you can just pop them in your mouth but what else do you do with them? So today I combine the two into a very unique and extremely flavorful main dish. I got a lot of raised eyebrows when I said I was going to make a cherry, quinoa and shrimp dish but this was one of the best dishes I've had in such a long time.

Cherry Quinoa
Makes 6 servings.

1/2 cup chopped onion
1 clove garlic, minced
1 tablespoon vegetable oil (I used olive oil)
1 can (14 oz.) chicken broth (I used vegetable broth)
1 cup quinoa, rinsed and drained
2 tablespoons chopped Anaheim pepper
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 cups pitted Northwest fresh sweet cherries
8 ounces small cooked peeled shrimp
1/4 cup chopped parsley
Prepared salsa, optional

Sauté onion and garlic in oil; add broth, quinoa, Anaheim pepper, salt and ground pepper. Bring mixture to boil, reduce heat, cover and simmer 12 to 18 minutes or until all liquid is absorbed. Fluff mixture with a fork and gently stir in cherries, shrimp and parsley. Serve with salsa, if desired.
