Strawberry Basil Balsamic Popsicles

We are in the thick of summer now and it's just so hot, everywhere. While my mouth tells me I want ice cream I know that subcombing every day would not make my shorts too happy. We've been buying so many fruit popsicles lately but plain strawberry, grape and orange get old quick. Even the delicious coconut popsicles have stopped giving me that tropical feeling.

So I started researching some unique popsicle recipes. I found several flavors that I had to share with our Market Street guests. Today I'll share the recipe for my favorite and the remaining recipes will make their debut in August (when the heat gets worse).

Strawberry Basil Balsamic Popsicles

3 cups fresh, hulled strawberries, divided
2 Tbsp chopped basil, divided
2 Tbsp sugar
2 Tbsp balsamic vinegar (you could try flavored balsamics too)

Ingredients: Strawberries, basil, sugar, balsamic vinegar and popsicle molds

Step 1: Combine 2 cups hulled strawberries, 1 tablespoon basil,
2 tbsp sugar and 2 tbsp balsamic vinegar

Step 2: Toss and let marinate for 1 hour.

Step 3: After the strawberries have marinated,
slice the remaining strawberries and basil and set aside.

Step 4: In the blender, puree the strawberry, basil, vinegar, sugar mixture until smooth.

Step 6: Add the remaining strawberries and basil. Use the
pulse button on the blender so bits of strawberry remain.

Step 7: Pour the mixture into the popsicle molds.

Step 8: Insert the popsicle sticks and place in the freezer for 8 hours.

Step 9: After 8 hours, remove from the freezer, let the popsicle sit on the
counter for a minute or two so they are easier to remove from the mold. Enjoy!!!
