Diabetes Friendly Dinner (including dessert)

For National Diabetes Awareness Month we wanted to create a great tasting, easy to make, low-carb dinner with items that are on sale at Market Street (in celebration of Diabetes Month).

What better meal to make than pasta? I can hear all my carb counting friends gasp! "Pasta? Do you know how many carbs are in pasta?" Ah! But we have a great solution for you. Our dinner uses the lowest carb pasta and sauce on the aisle as well as a low carb salad dressing. Plus, we made a dessert using soda and ice cream - yes soda and ice cream!

Let's first start with making the pasta and Arrabbiata sauce and salad with dressing.

This pasta and sauce (above) have the lowest carbs on the Italian aisle. The al dente Carba-Nada Egg Fettucine actually has such great nutrition we've named it a Dietitian's Top Pick.

Tip: boil your pasta water with oregano and basil instead of salt for great flavor withou the sodium (see below)

Typically 1/2 cup of whole wheat pasta would be about 1/4 of your plate and contain about 20-25g of carbs - just the pasta alone. Carba-Nada gives you 1-1/2 cups of pasta for only 24 grams of carbs (and 6 grams of that is fiber!).

How much pasta would you like to eat? The pasta on the left provides 24g of carbs and 2g of fiber. Carba-Nada pasta, on the right, provides 1-1/2 cups for only 24g of carbs and 6g of fiber.

For one serving of sauce, measure out 1/2 cup of Arrabbiata sauce and heat over medium heat on the stove or cover and warm in the microwave. Pour the sauce over the pasta!

This pasta and sauce only take 15-20 minutes to make and have a total of 23 grams of net carbs!

You will need: Clemmy's Orange Creme ice cream and Zevia Orange soda

Serve up 1/2 cup of the orange creme ice cream

Pour the Zevia Orange Soda over the ice cream until the ice cream reaches the top of the glass.
