Diabetes Friendly Orange Spiced Cranberry Sauce





Thanksgiving, my (Alicia's) most favorite holiday is now less than 2 weeks away. I'm so excited! November also happens to be Diabetes Awareness Month. So what better way to join Thanksgiving and Diabetes Awareness than to provide a Diabetes Friendly Thanksgiving Recipe: Cranberry Sauce.

Regular, canned cranberry sauce has 110 calories and 26 grams of carbs per 1/4 cup. We thought we could do one better and create a recipe for those who are watching their carbohydrates. Here is a recipe using Orange Flavored Stevia drops.

Orange Spiced Cranberry Sauce
Ingredients:
3 cups fresh cranberries
1 cup water
1/2 cup of light orange juice (I used Trop 50)
40 drops (roughly 1/3 teaspoon) orange stevia drops
1 tablespoon fresh lemon juice
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/8 teaspoon cloves

Ingredients: cranberries, fresh lemon juice, orange juice,
water, stevia drops (orange flavored), cinnamon, nutmeg and cloves.

Directions:
Mix together the water and orange juice in a small sauce pan and bring to boil over low heat. When the liquid begins boiling, add in the cranberries and spices and bring the mixture back to a boil. When you see the cranberries pop open immediately remove from the heat.

Bring the orange juice and water to a boil.

Add the cranberries and return to a boil.
When the cranberries "pop", remove from heat.


In a small bowl mix together the orange stevia drops and lemon juice. Pour this mixture right into the cranberries and mix everything together. Pour the mixture into a small bowl and refrigerate until ready to serve.

Add the lemon juice, stevia and spice mixture to the cranberries.


Pour the cranberry sauce into a bowl and refrigerate until ready to serve.
If you like your cranberry sauce less chunky, blend in a mixer or use
an immersion blender to achieve the desired texture. Add more spices or stevia to taste.


This recipe has 73% fewer calories, 70% fewer carbohydrates, and 86% less sugar than traditional canned cranberry sauce.
