Easy Candied Yams

 

This recipe would be great if you are pressed for time during the holidays or if you need to whip up something quick before a holiday work potluck. It can be stressful during the holidays with family members traveling into town and the added stress of also having cooking other holiday goodies, this is the perfect fast, easy, and delicious dish. Yams and sweet potatoes are high in fiber, vitamin A, vitamin C, and manganese, which are all essential for a healthy diet. This recipe requires no chopping or mixing so even the kids can get in on the action. You can even add walnuts to the topping for extra crunch and an added bonus of omega-3 fatty acids. Fast, easy, nutritious, and cheap! You can’t go wrong.

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients:
1 (29 ounce) can of sweet potatoes in light syrup
2 tablespoons margarine
1/3 cup brown sugar
1 cup miniature marshmallows



Directions:
1. Pre-heat oven to 375 degrees F

2. Place sweet potatoes in a medium baking dish, then mash sweet potatoes with a hand-held masher.





3. Distribute butter pieces evenly over the sweet potatoes. 





4. Sprinkle with brown sugar.  Layer with marshmallows.




              
5. Bake in preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted and browned.
