Dietitian's Top Pick: Honoring the Olympics

This Friday, February 7th marks the opening ceremonies for the 2014 Winter Olympics!  In my house, we always look forward to the Olympics.  We enjoy watching and cheering on some amazing athletes!  So on the night of the opening ceremonies, I like to plan our food in accordance with the event.  This year, I am planning on serving these “rings”. And in honor of the Olympics I did an Olympic- sized Dietitian’s Top Pick!  Each of the dips includes a Dietitian’s Top Pick!  Included are two fruit dips and three savory dips.

Olympic Rings of Dip”

Blue ring:

For this dip I used Wyman Wild Blueberries.  These are a Dietitian’s Top Pick with a NuVal score of 100!  I chose the canned berries thinking  they may be softer and easier to whisk with Marzetti’s Light French Vanilla Yogurt Fruit Dip.  It worked well, but in my excitement to put this together I forgot to take a picture before I opened the can and make this. So, here is a picture with the open can.  I used half a can of the blueberries and whisked together with the fruit dip.  Try serving with fruit and graham crackers!

Yellow ring:

This dip is simple.  I whisked Weight Watchers Cream Cheese, crushed pineapple, and 1 cup of Greek Gods Honey Kefir.  Weight Watchers Cream Cheese is a Dietitian’s Top Pick with a NuVal score of 31.  If you would prefer the dip to be a little sweeter, try mashing in a ripe banana.  This can also be served with fruit and graham crackers. 

Green and Red rings:
I kept these really simple. I just chose a few Dietitian Top Pick items, opened the containers, and transferred the content to bowls!   The green ring is Wholly Guacamole, which has a NuVal score of 89.  The red ring is Hell on the Red Mild Party Dip, which has a NuVal score of 29.  These dips are great served with Beanitos Chips!

Black Ring:
This was the most complicated dip I made, but still an easy recipe.  I used Full Circle Organic Black Beans which have a NuVal score of 82 and are a Dietitian’s Top Pick.  To make the dip, I also used some chopped onion and garlic cloves,  cumin and cilantro (I used dried because it’s what I already had but it is also great with fresh cilantro), and goat cheese.

Place your onions and garlic in a pan coated with cooking spray or with 1 tsp. oil and cook until softened, about 5 minutes.

Add beans and mash.

Slowly add chicken broth; then stir in cumin and cilantro.

 Add cheese and stir until blended.

Here’s the recipe for the Black Bean Dip:

1 tsp. olive oil or cooking spray
½ small onion, chopped (about ½ cup)
1 clove garlic, minced
1 can black beans, drained and rinsed
½ cup low-sodium chicken broth
¾ tsp. cumin
1 Tbsp. dried cilantro or ¼ cup chopped fresh cilantro
4 oz. goat cheese

In a medium saucepan, add oil or coat pan with cooking spray and place over medium heat.  Add onions and garlic; cook about 5 minutes until softened.  Add beans and lightly mash using a potato masher.  Stir in chicken broth, cumin and cilantro; simmer until thick, about 5 minutes.  Add cheese and stir until combined.  Serve with baked chips.

If you want this a little spicier, try adding some chopped green chilies!
