March Madness: Spicy Buffalo Cauliflower Bites

As mentioned several times this month, March is National Nutrition Month.  March is also the month to enjoy some basketball playoffs with March Madness.  Just like any other playoff games, many people enjoy the game with some friends and some food!  I thought this would be a great place to post a recipe that one could enjoy while watching the game while also enjoying the taste of eating right!  So, I have included a recipe for Spicy Buffalo Cauliflower Bites!   Cauliflower is a great source of vitamins C and K, potassium, fiber, and other antioxidants!  This is a great way to relish the spicy taste of buffalo wings without all the added fat, but instead with many nutritious benefits!  Also included is a great recipe for Skinny Blue Cheese Dressing to complete the experience.  Enjoy the taste of eating right!

In a large bowl, mix flour, chicken broth, and garlic.

Add mix to cauliflower and toss to coat.

Place cauliflower on a large baking sheet that has been coated with cooking spray; bake for 20 minutes.

While cauliflower is baking, combine hot sauce and melted butter in a small bowl.   Remove cauliflower from oven; pour the hot sauce mixture over the baked cauliflower.  Return to oven and continue baking for 5-10 minutes.

Serve with Skinny Blue Cheese Dressing (recipe below).

Note:  You make need to add a little extra fluid if your flour mixture is too thick to coat the cauliflower.  Especially if using GF flour.

Also, if you want them a little more brown—just roast a little extra.
