Sesame Ginger Salmon

Can you believe March is already half over? Hopefully you've enjoyed many new foods this month. March is National Nutrition Month® and the theme this year is Enjoy the Taste of Eating Right. Last week we gave you our Mexican Quinoa Casserole so you could incorporate quinoa if it was a new food for you. This week we take salmon and jazz it up.

I (Robin) love salmon.  It is my “Go To” quick dinner.  There are so many different ways to cook it.  Sometimes we will grill it or cook on the stove in a skillet.  But, this is my most favorite salmon recipe.  I love to mix the marinade before I go to work and let it marinade all day in a Ziploc bag.  When I get home, all I have to do is open the bag and dump all the ingredients in a pan and let it bake for 20 minutes.  It doesn’t get much easier than that.  This recipe is so delicious, you could serve it to company. 

If you are afraid to cook Salmon because you are afraid of the “fishy” taste, try this recipe because it has so much flavor, you won’t even know you are eating fish.

Another great benefit of this meal is that Salmon is great for you.  It contains Omega-3 fats which help lower triglyceride levels and blood pressure.

Sesame Ginger Salmon (complete recipe at the bottom)

Ginger Marinade Ingredients

Honey Ginger Glaze

Bake marinated salmon at 400 degrees for 20 minutes.

Serve salmon immediately with Honey Ginger Glaze (and half a plate of fruits and vegetables)

Ginger Marinade
¼ cup olive oil
2 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp sesame oil
2 tbsp brown sugar
2 cloves garlic, minced
1 tbsp grated fresh ginger
1 tbsp sesame seed
4 green onions, thinly sliced
4 salmon filets

Honey Ginger Glaze
2 tbsp honey
1 tsp soy sauce
½ tsp siracha or more to taste
½ tsp grated fresh ginger
½ tsp sesame seeds

1. In a medium bowl,  whisk together all ingredients for the marinade
2. In a gallon size Ziploc bag or large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the bag occasionally.
When ready to serve:
3. In a small bowl, whisk together ingredients for the glaze and set aside
4. Preheat oven to 400 degrees.  Coat 9x13 baking dish with nonstick spray
5. Place salmon filets and marinade in the prepared baking dish and bake until fish flakes easily with a fork, about 20 minutes
6. Serve salmon immediately with the Honey Ginger Glaze
