Burrito Bowl with a Creamy Chipotle Sauce



As the weather warms up, so does my desire to spend more time outside, not in the kitchen.  But, I don’t want to sacrifice eating good food either.  So, this is a great go-to recipe.  It can be made in no time!  You can try baking your rice or buy some instant rice to make this a quick and easy meal.  Perhaps there is just one or two of you in the house.  Try some of the single serving microwavable brown rice cups to help speed things along.  You can use canned or frozen beans and corn.  You can also use pre-chopped lettuce to really decrease your prep time.   Want to add more protein?  Pick up one of our rotisserie chickens and just shred.  The great thing about this recipe is that you can add your favorite ingredients in no time.  The hardest part is the dressing… and with the help of a food processor or blender, it is still a fast process.  So, go enjoy the beautiful spring weather and a great meal!

Here’s some of the ingredients you need to gather:



I chose to bake my rice (for recipe go here).  So I just stirred in some salsa and cilantro to give it some great flavor.
After you finish chopping and preparing all of your other chosen ingredients, grab  some Greek yogurt, chipotles, a lime, cumin, and garlic to make the dressing:

Place ingredients into food processor.

 


Pulse for a minute or so, adding lime juice to get the consistency you desire.


Begin building your burrito bowl.
Top it off with the dressing and some more cilantro for some extra color and enjoy!






Burrito Bowl
Ingredients
1 cup uncooked rice or quinoa
1/2 cup salsa
1 can black beans, rinsed and drained
2-3 tomatoes, diced
1 1/2 cups corn
Romaine lettuce, chopped
Creamy chipotle sauce (recipe below)
1 rotisserie chicken, shredded
Other additions: onion, green onion, bell pepper, avocado/guacamole, cheese, cilantro

Directions
Cook rice.
While rice is cooking, prep your veggies and make the creamy chipotle sauce (see below).
When rice is cooked, stir in salsa.
Begin layering your bowl: start with rice, then black beans, vegetables, and chicken.
Drizzle the creamy chipotle sauce on top and enjoy! Serves 4-6.



Creamy Chipotle Sauce
Ingredients
½-1 cup fat-free plain Greek yogurt
1 chipotle in adobo sauce
1/2 tsp. adobo sauce
1-2 cloves garlic
1 Tbsp. fresh lime juice
1/8 tsp. cumin

Directions
Scrape away the seeds from the chipotle with a knife (use caution when handling chipotle, and wash your hands when done.)
Add all ingredients to a blender and blend until smooth.
Taste and adjust seasonings/consistency as necessary.

Tips: if the sauce is too thick, thin it out with more lime juice, or olive oil. If it's too thin, add more greek yogurt. If you like a touch of sweetness, add some honey/agave.
