Spicy Goat Cheese Mini Quiches


Is it just us, or does everything taste better in minis? Whether with guests, family, friends, or just for you, these mini tartlets serve as a fun appetizer or snack (and it will look like you put in way more work than you actually did)! These are quick and easy treats that the kids can help prepare as well. Hatch green chilies are some of our favorite ingredients to add to recipes to spice things up a bit. Can’t find them fresh? Well, canned ones work just as great in this recipe!
 
Ingredients you will need:

Chop an onion; place in a skillet that has been coated with cooking spray.  Add garlic and green chilies; cook over medium high heat until brown. Remove from heat.


After mixing all ingredients in a bowl, pour mixture into mini tarts; bake in 375 degree oven for 10-12 min.

Spicy Goat Cheese Mini Quiches
Ingredients
•2 packages Athens Mini-Phyllo Tarts
•5 eggs
•3 tbsp half & half or milk
•1 hatch chile pepper, chopped (or about ½ a small can)*
•4 tsp minced garlic
•½ white onion, chopped
•⅓ cup Jimmy Dean Fully Cooked Ground Sausage**
•⅓ cup goat cheese, crumbled
•Dash of salt
•Dash of pepper
•Cooking spray

*Canned hatch chiles can come in mild or hot, whichever you prefer!
**Can also use Jimmy Dean Fully Cooked Ground Turkey Sausage for a healthier alternative.
Instructions
1.Preheat oven to 375 degrees.
2.In a medium sized skilled over medium high heat, spray with cooking spray and add hatch chilis, garlic and onion. Saute for about 8 minutes, until the onions start to brown. Remove from heat.
3.In a medium bowl, whisk together eggs and half & half. Add in hatch chile mixture, sausage, goat cheese, salt and pepper.
4.Pour egg mixture into the mini-tarts. Bake for 10 to 12 minutes, until tarts are crispy and egg mixture has set.
