Did Someone Say Bacon? Pumpkin Goat Cheese Bacon Appetizers



I had you at bacon, right?  A dietitian talking about bacon?  Yes.  Occasionally we will indulge in some bacon- all things in moderation!  Pumpkin is also a favorite and I was looking for a new way to use it.  I found it in this appetizer.  This is an easy recipe that is great to serve or take to your next holiday gathering.  This can also be served in a variety of ways.  You can spread it on crackers, pita chips, bagel toasts, sliced baguettes, or celery.  You can even use this as a spread on your sandwich or bagel.  Now that I have your mouth watering, here's how to prepare the recipe:

For the spread, gather chopped bacon, honey, a Granny Smith apple, cream cheese, goat cheese, pumpkin, and pecans. 



Begin by mixing together the goat cheese, cream cheese and pumpkin; stir in pepper and 3/4 of the bacon.  Spread on crackers, bread or veggie.  I used pita chips this time.  Next, dice the apple; sprinkle over the chips with the spread and follow with the pecans.  Drizzle with honey.  Enjoy!!

 


 
Pumpkin Goat Cheese Appetizer

Ingredients
       8 oz.  Light Cream Cheese
       4 oz. Goat Cheese
       ¾ cup Pureed Pumpkin
       5 slices of bacon cooked and crumbled or 1/3 real bacon bits
       ⅛ teaspoon black pepper
       ½ cup of chopped walnuts or pecans
       ½ cup chopped granny smith apples
       ¼ cup honey for drizzling
       Crackers, pita chips, baguette slices, or celery
 
 
Instructions
1.    Mix cream cheese, goat cheese and pumpkin in a small bowl.
2.    Add pepper and ¾ of the crumbled bacon to the mixture. Save some bacon for garnish.
3.    Spread the dip onto a cracker or toasted baguette slice.
4.    Sprinkle with nuts, apples, bits of bacon then drizzle with honey before serving.
