Easy Turkey Meatballs (or Meatloaf)

December has to be one of the most hectic months of the year.  People are scurrying about, shopping, attending events, donating, volunteering, and caroling while trying to keep up with all the every day tasks that do not get a Christmas vacation.

Dinners can become quite a challenge. That is why we have a delicious, easy and versatile recipe for you to keep your family full and happy.

This recipe can be used to make:
- spaghetti and meatballs
- meatball subs
- appetizers
- a main dish with mashed potatoes and green beans
- meatloaf
- meatloaf sandwiches

Printable Recipe

1 lb ground turkey (93% lean)
1 egg
2/3 cup pasta sauce
1/3 cup plain oats
1/3 cup dried vegetable soup mix (Knorr)
1/4 tsp black pepper

Directions for Meatballs:
1. Preheat oven to 375
2. Mix all ingredients together in a large mixing bowl.

3. Form mixture into 8 large meatballs or 16 small meatballs and place on a large cookie sheet sprayed with nonstick cooking spray. Cover pan with foil.

4. Bake, covered, for 25-30 minutes or until meatballs are cooked through. Remove foil and cook for an additional 5 minutes to brown if needed.

Directions for Meatloaf:
1. Preheat oven to 350
2. Mix all ingredients together in a large mixing bowl.
3. Press mixture into 8x4 inch loaf pan and cover with foil.
4. Bake, covered, for 50-55 minutes or until meatloaf is cooked through (an internal temperature of 165F).
5. Remove from heat and let stand for 5 minutes before serving.
