Mojito Fruit Salad




Summertime is upon us, and that means those sweet, delicious summer fruit we all love is in high season! This mojito fruit salad is a wonderful treat on a hot summer day or at any summer event you have coming up! It’s so easy to throw together too, you can purchase the Fresh Cut fruit salads in the produce aisle and skip chopping all the fruit! This salad was quick, easy and tasted delicious! Fruit is an important part of any healthy diet and provides anti-inflammatory properties as well as important vitamins and minerals. Enjoy some fruit this summer with this great recipe.



Start by gathering your ingredients: Fruit, sugar, water, lime juice (or limes to juice),
rum extract, mint.

Chop the mint, leaving a few leaves whole for garnish.

 


In a small saucepan, combine sugar and water over low heat; heat until sugar is
dissolved.  Let cool.  Stir in lime juice an rum extract.

 Slowly drizzle the lime mixture over the fruit; gently stir to combine. 
Stir in the chopped mint. 


Chill for about 15 minutes before serving.  Serve and garnish with mint leaves.

Mojito Fruit Salad

Recipe:
8 cups fresh fruit, chopped (or you can use any combination of our Fresh Cut Fruit)
¾ cup granulated sugar
¼ cup water
½ cup lime juice
2 teaspoons rum extract (optional if you want a rum taste)
2 tablespoons chopped mint plus a few mint leaves for garnish

Instructions:
1.      Combine fruit in bowl with fresh mint
2.      Combine sugar and water in a small saucepan over low heat and heat until sugar is dissolved. Take off burner and let liquid cool
3.      Stir in lime juice and rum flavoring.
4.      Drizzle about half of the lime mixture over the chopped fruit and gently stir until combined
5.      Continue to add lime mixture until fruit is lightly coated. You do not want juice to puddle at the bottom of the bowl.
6.      Garnish with whole mint leaves
7.      Chill fruit salad for at least 15 minutes before serving
