Raw Sweet Potato & Beet Slaw with Honey Lime Vinaigrette

Sweet potatoes are only for the fall, right? Not so fast. Today we have the perfect summer salad to keep you cool, all while enjoying your favorite tuber (that's a potato).

This slaw is perfect for summer get togethers or just a weeknight meal.

Raw Sweet Potato & Beet Slaw with Honey Lime Vinaigrette
Yield: 6 portions of 1 cup each
Timing: Prep time = 20 minutes

2 medium sweet potatoes, peeled
3 medium beets, peeled
1 Granny Smith Apple, cut into matchstick sized pieces
3 scallions, chopped
½ cup pumpkin seeds

½ cup apple cider vinegar
3 tbsp honey
½ cup fat free Greek yogurt
1 lime, zest and juice

1.    Using a spiralizer make long curly pieces out of the sweet potatoes and beets. Tip: After a few spirals form, snip the veggie to make bite size pieces.

2.    Combine the sweet potato, beet, apple and scallions in a large bowl. Top with the pumpkin seeds.

3.    Combine all the dressing ingredients in a small bowl and stir until you don’t see any yogurt clumps.

4.    Serve immediately. Tip: the salad can marinate in the refrigerator but the beets will color the apples and scallions.
