Rethink Ramen - Part 2 - Broccoli Ramen Slaw

Last week we shared a recipe using Ramen, encouraging you to Rethink the Ramen of your college days. You loved it so much we thought maybe you'd enjoy another recipe using Ramen.

Broccoli Ramen Slaw (print recipe)

Makes 6 servings


1 pkg (12 oz) broccoli or cabbage slaw (found near bagged salad or make your own!)
1/4 cup olive or canola oil
1/4 cup white vinegar
1/4 cup sugar
2 tbsp sunflower seeds
2 tbsp dry roasted peanuts, lightly salted

Combine all ingredients and stir to mix well.
Serve immediately or chill in the refrigerator.

150 calories
12g fat (1.5g saturated fat)
10g carbs
1g protein

Try it served as a garnish on grilled fish tacos!
